ODE TO THE GARLIC SCAPE
O garlic scape O garlic scape The pleasure that you bring Now the sun is climbing higher The season's in full swing.
We grill you and We eat you raw We grind you into paste We appreciate your subtlety Your lovely sweet spring taste.
Your graceful shape reminds us Of a lovely long necked crane A snake who loves the summer sun A swaying head of grain.
Your harvest gives the garlic bulb That extra push it needs. So with grateful hearts We celebrate The mouths and souls you feed.
The garlic scape is the flower stalk of the garlic plant and we "snap" them off to encourage the plant's energy into the bulb. This process takes many days and we have hundreds of pounds of the scapes when we are through. Here are ideas for enjoying them.
1. Toss and marinate scapes with olive oil and a little balsamic vinegar and tamari, then grill. TOO GOOD TO BELIEVE!!
2. They are also delicious as a pesto or paste tossed with pasta or topping grilled salmon. To make this pesto, grind the scapes in a food processor with a little bit of lemon and salt. That's it. Scrumptious.
Their garlickyness is not overpowering, just delicious.
