We had another perfect day for the Spring - a - Leek gathering at Five Springs Farm on May 5. We planted about 100 pounds of potatoes - reds including Caribe, Red Gold and Sangre. A yellow fleshed Adora was in the planting and our favorite white one called Onaway. New potatoes will be ready to harvest by early July. The potato-leek soup - made from spuds we didn't plant and wild leeks (aka ramps) was up to the high standard we expect from chef Kurt Harvey of Camp Arcadia.
