Dear meadowlark spring share friends, Spring is here and we gratefully bring you a box bursting with green goodness. These days of sun and warmth coax us all into the outside world and encourage the greens to grow, grow, grow. Jon prepares the spring gardens, spreading compost and tilling new beds and the rest of us spent the week digging overwintered parsnips, carrots and Jerusalem artichokes as well as pruning the raspberries. The greenhouse is bursting with babies ready to be transplanted and they are healthy and happy. Today's boxes include: 2 pounds of spinach!, kale, 1 pound of salad greens, fresh cilantro, the sweetest little 4# bag of carrots ever,2 ½# parsnips(white and carrot like), a bag of big potatoes, a bag of wee potatoes, red onions and shallots. That is all we can fit for this delivery.....we are happy to share these sweet and delicious parsnips and carrots. If you're not familiar with parsnips, don't be shy because they are soooooo good. My ella loves them dearly and our favorite way to eat them is oven roasted. Cut them uniformly, toss with olive oil, honey and thyme or rosemary, salt and roast in a 420 oven until caramelized and brownish. Also, check out the recipe below. Included in your box this week is a brochure from the Manton Amish Community. They will once again offer their meat and maple syrup to our meadowlark community of eaters and their prices and philosophy are laid out for you to see. For this year, they have found a neighbor who will drive them into town to connect with you on box days. They will come into TC only, set up at F&M park, every other Tuesday.
